Walla Walla Onion Pie(Similar To A Quiche)
- 4 Walla Walla sweet onions, sliced thin
- 1 Tbsp. salad oil
- 3 Tbsp. margarine or butter
- 2 eggs, beaten
- 1 c. half and half
- 2 Tbsp. flour
- salt and pepper to taste (I use 1 tsp. salt)
- 1 "shake" of cinnamon or nutmeg
- 3/4 c. cheese, grated (your choice of Cheddar, Swiss, Provolone, etc.)
- parsley if desired
- 1 (9-inch) pie shell, baked until about half done
- Saute onions in oil and butter until a light brown.
- Combine eggs, flour, salt, pepper and spice.
- Add about 1/2 cup of cheese. Lay the onions onto the partially baked pie crust and pour the egg mixture over them.
- Sprinkle the rest of the cheese over the top and bake at 375u0b0 about 25 to 30 minutes until a golden brown.
