White Chocolate Chip-Oatmeal Cookies
- 1 cup butter, softened
- 1 cup firmly packed light brown sugar
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 cups uncooked oats
- 2 cups white chocolate chips
- 1 cup coarsely chopped pecans
- Beat butter at medium speed with mixer until creamy; gradually add sugars, beating well. Add eggs, 1 at a time, beating just until yellow dissapears after each addition. Stir in vanilla.
- Combine flour and next 3 ingredients, gradually add to butter mixture, beating until blended. Stir in oats, chocolate morsels, and pecans. Drop by tablespoons onto greased baking sheets.
- Bake at 350F for 12 minutes. Cool on baking sheets 3 minutes; remove to wire racks to cool completely.
