White Christmas Cake

  1. In a large saucepan, bring margarine or butter and 3/4 cup water to boiling, stirring constantly.
  2. Remove from heat.
  3. Add baking bar; stir until melted.
  4. Stir in buttermilk, eggs and rum extract; set aside.
  5. Sir together 1/2 cup of the flour and the pecans; set aside.
  6. In an extra bowl, stir together remaining 3 cups flour, sugar, coconut, soda and powder.
  7. Stir in margarine mixture.
  8. Fold in coconut mixture.
  9. Stir in margarine mixture. Fold in pecan mixture.
