Texas Jam Cake
- 1 c. margarine or butter, softened
- 5 eggs
- 1 c. Bama strawberry preserves
- 1 Tbsp. baking soda
- 2 tsp. ground cinnamon
- 1 c. buttermilk
- chopped nuts (optional)
- 1 c. sugar
- 1 (16 oz.) jar Bama red plum jam
- 3 c. all-purpose flour
- 2 tsp. ground allspice
- 1/2 tsp. ground cloves
- Maple Frosting
- Preheat oven to 350u0b0.
- In large mixing bowl, beat margarine and sugar until fluffy.
- Add eggs, 1 at a time, beating well after each addition.
- Stir in jam and preserves.
- Stir together dry ingredients; add alternately with buttermilk to jam mixture.
- Turn into 3 well-greased wax paper-lined 9-inch layer cake pans.
- Bake 40 minutes or until wooden pick inserted near center comes out clean.
- Cool 5 minutes; remove from pans.
- Cool completely.
- Frost with Maple Frosting.
- Garnish with nuts if desired.
