Chicken Curry Croquettes(Makes 16)
- 1/4 c. Land O Lakes butter
- 1/2 c. Pillsbury's Best all-purpose flour
- 1 c. milk
- 2 c. ground or finely chopped cooked chicken
- 1/4 c. chopped celery
- 2 Tbsp. chopped parsley
- 2 Tbsp. lemon juice
- 1 tsp. salt
- 1 tsp. celery seed
- 1 tsp. grated onion
- 1 tsp. gravy extract
- 1/4 tsp. curry powder
- 1/8 tsp. pepper
- 1/8 tsp. hot pepper sauce
- 2 unbeaten eggs
- Melt butter in saucepan over low heat.
- Stir in flour. Gradually add milk.
- Cook, stirring constantly, until thick.
- Add remaining ingredients, except eggs.
- Stir in eggs.
- Heat thoroughly, stirring constantly.
- Spread in 8 or 9-inch pie pan, lined with foil.
- Freeze 1 1/2 to 2 hours until partially frozen.
