Broccoli Quiche

  1. Rinse and drain broccoli.
  2. Chop to measure 2 cups, both florets and stalks (optional).
  3. Grate cheese and slice scallions (thin). Regular onions may be used.
  4. In bowl beat eggs with broth, cream, salt and pepper sauce.
  5. Prick bottom and sides of pie shell.
  6. Bake in 450u0b0 oven for 5 minutes.
  7. Remove from oven and sprinkle 1/2 grated Parmesan over bottom of pie shell.
  8. Scatter 1/2 broccoli, 1/2 Swiss cheese and 1/2 scallions.
  9. Repeat with remaining.
  10. Pour egg mixture over all.
  11. Sprinkle other 1/2 grated cheese.
  12. Bake at 450u0b0 for 5 minutes.
  13. Lower temperature to 325u0b0.
  14. Bake 25 minutes, until set.
  15. Knife will come out clean.
