Broccoli Quiche
- 2 c. chopped broccoli
- 1/4 c. sliced (thin) scallions
- 2/3 c. chicken broth
- 1/2 tsp. salt (optional)
- 1 unbaked pastry shell
- 1/4 c. Parmesan cheese
- 1 c. grated Swiss cheese
- 3 eggs
- 1/2 c. heavy cream
- 1/4 c. red pepper sauce
- Rinse and drain broccoli.
- Chop to measure 2 cups, both florets and stalks (optional).
- Grate cheese and slice scallions (thin). Regular onions may be used.
- In bowl beat eggs with broth, cream, salt and pepper sauce.
- Prick bottom and sides of pie shell.
- Bake in 450u0b0 oven for 5 minutes.
- Remove from oven and sprinkle 1/2 grated Parmesan over bottom of pie shell.
- Scatter 1/2 broccoli, 1/2 Swiss cheese and 1/2 scallions.
- Repeat with remaining.
- Pour egg mixture over all.
- Sprinkle other 1/2 grated cheese.
- Bake at 450u0b0 for 5 minutes.
- Lower temperature to 325u0b0.
- Bake 25 minutes, until set.
- Knife will come out clean.
