Fruit Cake

  1. Melt butter in hot coffee and set aside.
  2. Mix dry ingredients. Add nuts and fruit, stirring after each addition.
  3. By now, coffee should be warm.
  4. Break eggs into it, stirring.
  5. Add to the dry ingredients.
  6. Stir in the preserves.
  7. Pour (or throw) mix into well-greased pans.
  8. Bake at 350u0b0, time varies by pan.
  9. Loaf pans take about 1 1/2 hours.
  10. Use a toothpick to check, or bake at 300u0b0 for 2 hours.
  11. Place a pan 1/2 full of water in the oven while baking.
  12. Makes 4 to 6 cakes, depending on the size of the pans.
