Date-Nut Bread
- 4 Tbsp. sweet butter, cut into 6 chunks
- 1 c. pitted dates, coarsely chopped
- 1/4 c. brown sugar
- 1/4 c. granulated sugar
- 3/4 c. boiling water
- 1 egg, beaten
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 c. shelled walnuts, chopped
- 1/2 tsp. vanilla extract
- 1/2 tsp. salt
- Preheat oven to 350u0b0 and grease a 9 x 5 x 3-inch pan.
- Place butter in a large mixing bowl.
- Place dates on top and pour both sugars over.
- Pour boiling water over ingredients in the boil. Let sit for 7 minutes; stir well.
- When mixture is cool, add the egg and mix well.
- Sift the flour, baking powder and salt together.
- Add to date mixture, beating for 30 seconds.
- Stir in walnuts and vanilla.
- Pour mixture into prepared pan.
- Bake for 45 to 50 minutes.
