Caramel Apple Cheesecake
- 1 1/4 c. graham cracker crumbs
- 3 Tbsp. sugar
- 1/4 tsp. ground cinnamon
- 1/4 c. melted margarine
- 1 c. apple pie filling
- 1 large apple, cored, peeled and chopped
- 24 oz. cream cheese
- 2/3 c. dark brown sugar
- 5 tsp. flour
- 3 eggs
- 1 egg yolk
- 1 1/4 tsp. ground cinnamon
- 1 1/4 tsp. vanilla extract
- 3/4 tsp. ground nutmeg
- 2/3 c. whipping cream
- In a small bowl, stir together the pie filling and chopped apple; set aside.
- In a large bowl, combine cream cheese, brown sugar and flour.
- Beat with electric mixer until smooth.
- Add eggs and yolk, one at a time, beating well after each addition.
- Beat in cinnamon, extract and nutmeg.
- Stir in whipping cream.
- Pour half of the cream cheese mixture over the crust.
- Spoon on 1 cup of the apple mixture.
- Pour the remaining cream cheese mixture over the apple; top with remaining apple mixture.
- Without disturbing the crust, swirl the blade of a knife throughout the filling to distribute the fruit evenly.
