Pumpkin Cookies
- 4 c. flour
- 2 c. oats
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/2 c. butter (soft)
- 2 c. firm packed brown sugar
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/2 c. solid pack pumpkin (half 29 oz. can)
- 1 pkg. chocolate chips
- Preheat oven to 350u0b0.
- Combine flour,
- oats, soda, cinnamon and salt.
- Set aside.
- Cream butter; gradually add sugars, beating well until light and fluffy.
- Add egg and vanilla.
- Mix well. Alternate additions of dry ingredients and pumpkin.
- Mix well after each addition.
- Stir in chips.
- For each cookie, drop 1/4 cup of dough onto lightly greased cookie sheet.
- Spread into pumpkin shape.
- Add dough to form stem.
- Bake at 350u0b0 for 20 to 25 minutes.
- Makes about 32 large cookies.
