Irish Coffee Pudding

  1. Cream
  2. egg
  3. yolks
  4. with
  5. sugartntil thick
  6. and
  7. lemon colored.
  8. Dissolve instant coffee in hot water,
  9. add
  10. gelatin and dissolve.
  11. Blend into egg yolks and sugar.teat in double boiler over boiling water, beating continuously
  12. until mixture begins
  13. to thicken.tdd
  14. whiskey and beat until
  15. thick
  16. and creamy. Remove
  17. from
  18. heattnd cool;
  19. stirring
  20. frequently. When mixture is at point of setting, whip 1 1/4 cups cream and fold
  21. in.
  22. Whip and
  23. fold
  24. in egg whites.
  25. Pour
  26. into
  27. 7-inch souffle
  28. case with 3-inch paper collar tied around it.
  29. Oil
  30. a jam jar and press down into center of pudding.
  31. Chill
  32. to set. Remove
  33. paper collar and jar.
  34. Fill center with 1
  35. cup
  36. cream, whipped
  37. and 2 tablespoons crushed walnuts.
  38. Decoratetxposed sides of pudding with chopped walnuts.
  39. Serves 10 to 12.
