Mom'S Pineapple Upside-Down Cake

  1. Mix and sift flour, baking powder and salt. Combine brown sugar and butter in an eight inch skillet or cake pan and stir over low heat until blended well. Arrange fruit on brown sugar mixture, placing fruit cut side up. Slowly stir white sugar into egg yolks, adding hot water slowly and beat well. Add vanilla and dry ingredients mixing well. Beat egg whites until stiff and fold into above batter. Pour batter carefully over fruit, bake in 350u0b0 oven for 50 minutes. While still hot, invert onto a serving platter.
