Seafood Rotelle
- 6 Tbsp. margarine
- 1 c. green onions, chopped (tops also)
- 2 c. chicken broth
- 1 bottle clam juice
- 1/2 c. white wine
- 1/2 c. plain yogurt
- 1/2 tsp. oregano
- 1/4 tsp. crushed red pepper
- 6 Tbsp. flour
- 1/2 c. Parmesan cheese
- 1 1/2 lb. small, cooked shrimp
- 1 can drained crabmeat
- 1 pkg. rotelle, cooked al dente
- 1/2 lb. sliced mushrooms
- 3 cloves minced garlic
- In 4 tablespoons margarine, cook onion until limp.
- Blend in flour and stir until bubbling.
- Remove from heat; stir in broth, clam juice, wine, yogurt, oregano, red pepper, 1/4 cup Parmesan cheese and 1/4 cup Mozzarella cheese.
- Stir until thick and the cheese has melted.
- Add shrimp and crab.
- Pour over rotelle.
