New World Tzimmes(Jewish Sweet Potato Casserole)
- 3 large sweet potatoes, cleaned
- 2 Tbsp. butter
- 2 large carrots, sliced
- 2 medium apples, peeled, cored and diced
- 2/3 c. raisins
- 1/3 c. walnuts and pecans, chopped
- 1/2 c. milk
- 1/2 c. plain yogurt or sour cream
- 1/4 c. honey (to taste)
- 1/2 tsp. cinnamon
- 1/4 tsp. ground cloves
- pinch of nutmeg
- 1 tsp. salt
- Cook or bake potatoes in their skins until tender, but firm. Preheat oven to 350u0b0.
- Heat 2 tablespoons butter in skillet until it foams.
- Add carrots and saute until nearly tender.
- Add apples and saute until a bit soft.
- Peel sweet potatoes and cut into large dice; place in bowl.
- Combine sauteed carrots and apples with remaining ingredients; mix thoroughly.
- Pour into oiled deep casserole dish; cover and bake 20 to 30 minutes.
