Microwave Chicken Paprika
- 3/4 cup vegetable juice
- 1 1/2 teaspoons flour
- 2 teaspoons paprika
- 1/2 teaspoon seasoning salt
- 1 teaspoon olive oil
- 1/4 cup green onion, sliced
- 1 cup bell pepper, chopped
- 1 garlic clove, minced
- 1/2 lb boneless chicken breast, cut into 2-inch strips
- 2 tablespoons sour cream
- 1 cup hot cooked rice
- Combine juice, flour, paprika, and salt in a small bowl; set aside.
- Combine oil, onions, peppers, and garlic in a medium microwave safe bowl. Cover and cook on high for 1 minute.
- Add chicken strips and cook for 1 minute.
- Add juice mixture and cook 2-3 minutes until boiling.
- Stir, cover, and cook on medium-low (30%) for 15 minutes.
- Stir in sour cream and serve over hot rice.
