Cranberry Nut Bread
- 1 lb. fresh cranberries
- 2 medium oranges, seeded
- 2 c. sugar
- 4 c. sifted all-purpose flour
- 2 tsp. baking powder
- 2 tsp. soda
- 2 tsp. vanilla
- 1 c. chopped nuts
- 1 tsp. salt
- 2 eggs, beaten
- Grind cranberries and oranges through coarse blade of food grinder.
- Add sugar and let stand for 2 hours.
- Sift flour, baking powder, soda and salt together.
- Blend remaining ingredients with fruit mixture; add dry ingredients and mix just until flour is moistened.
- Pour into two 9 x 5 x 3-inch pans which have been greased, lined with wax paper, then greased again.
- Cover loosely with aluminum foil to help prevent loaves from cracking on top. Bake at 350u0b0 for 20 minutes.
- Remove foil; continue baking about 40 minutes.
- Remove from pan immediately.
- Peel off paper and cool. Can freeze or keep in refrigerator.
- Tastes better after it stands for awhile.
