Cranberry Nut Bread

  1. Grind cranberries and oranges through coarse blade of food grinder.
  2. Add sugar and let stand for 2 hours.
  3. Sift flour, baking powder, soda and salt together.
  4. Blend remaining ingredients with fruit mixture; add dry ingredients and mix just until flour is moistened.
  5. Pour into two 9 x 5 x 3-inch pans which have been greased, lined with wax paper, then greased again.
  6. Cover loosely with aluminum foil to help prevent loaves from cracking on top. Bake at 350u0b0 for 20 minutes.
  7. Remove foil; continue baking about 40 minutes.
  8. Remove from pan immediately.
  9. Peel off paper and cool. Can freeze or keep in refrigerator.
  10. Tastes better after it stands for awhile.
