Sicilian Meat Roll
- 2 beaten eggs
- 3/4 c. soft bread crumbs
- 1/2 c. tomato juice
- 2 Tbsp. snipped parsley
- 1/2 tsp. dried oregano
- 1 small clove garlic, minced
- 2 lb. lean ground beef
- 1 1/2 c. (6 oz.) shredded Mozzarella cheese
- 8 thin slices boiled ham
- 3 slices Mozzarella slices
- Combine first 6 ingredients, 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Add beef; mix well on foil.
- Pat meat to 12 x 10-inch rectangle.
- Arrange ham atop.
- Top with shredded cheese. Starting from short end, carefully roll up meat, using foil to lift.
- Seal edges and ends.
- Place seam side down in 13 x 9-inch baking pan.
- Bake in 350u0b0 oven for 1 1/4 hours.
- (Center will be pink.)
- Halve cheese diagonally.
- Place atop roll.
- Return to oven until melted.
- Makes 8 servings.
