Summer Pepper Relish (No Cooking!)

  1. prepare all vegetables diced small into 1/4 in squares.
  2. crush and mince garlic.
  3. grate zest of lemon and juice the lemon.
  4. place onion, pepper, and garlic into medium size bowl.
  5. add olive oil, adjust amount according to desired texture/consistency, mixing well.
  6. Add lemon juice and zest, mix well.
  7. Add sherry vinegar and mix well.
  8. Add sea salt to taste
  9. (optional) chill in refrigerator for 15-20 minutes prior to serving.
