Power Bars (Aka Tasty Protein Nuggets)

  1. Combine first 5 ingredients in a large bowl.
  2. Whisk tofu until smooth in a small bowl.
  3. Add juice, sugar, eggs and peanut butter one at a time, mixing well.
  4. Pour tofu mix over dry ingredients and mix until just combined.
  5. Fold in fruit and nuts.
  6. Line a 9x13 pan with parchment paper and spray with canola oil non-stick spray.
  7. Spread batter in pan.
  8. Bake at 350F for approximately 35 minute.
  9. Cool completely before cutting.
