One Pot Ham And Potato Casserole

  1. Melt butter in a large Dutch oven or oven safe heavy bottom pot.
  2. Add onions and celery and saute for 1-2 minutes until softened.
  3. Whisk in flour and cook for 1-2 minutes.
  4. Whisk in milk a little at a time and cook until just beginning to boil and sauce has thickened.
  5. Remove from heat and add 1 and 1/2 cup of the cheese and stir until incorporated.
  6. Stir in sour cream.
  7. Add ham, potatoes, corn and peas.
  8. Cover and place in 375 F (190 C) oven for 25 minutes.
  9. Remove cover, sprinkle remaining cheese on top and cook for additional 5 minutes.
