One Pot Ham And Potato Casserole
- 3 tablespoons butter
- 1/4 cup diced onion
- 1/4 cup diced celery
- 3 tablespoons flour
- 1 cup milk (can add more if it thickens too much)
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup diced cooked potato
- 2 cups diced ham
- 1/4 teaspoon pepper
- 1/8 teaspoon cayenne (or to taste)
- 1/4 teaspoon salt (or can omit since ham and cheese are salty)
- Melt butter in a large Dutch oven or oven safe heavy bottom pot.
- Add onions and celery and saute for 1-2 minutes until softened.
- Whisk in flour and cook for 1-2 minutes.
- Whisk in milk a little at a time and cook until just beginning to boil and sauce has thickened.
- Remove from heat and add 1 and 1/2 cup of the cheese and stir until incorporated.
- Stir in sour cream.
- Add ham, potatoes, corn and peas.
- Cover and place in 375 F (190 C) oven for 25 minutes.
- Remove cover, sprinkle remaining cheese on top and cook for additional 5 minutes.
