Sandra'S German Apple Cake
- Cake
- 2 large eggs
- 1 cup oil (I use peanut oil)
- 2 cups sugar (I use turbinado sugar)
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 cups flour (I use wholewheat)
- 4 cups peeled cored and sliced baking apples (I use Granny Smith)
- 1 cup coarsely chopped walnuts
- Frosting
- 8 ounces cream cheese
- 2 tablespoons butter
- 1 teaspoon vanilla
- 3 cups powdered sugar
- Cake: Beat the eggs until light.
- Add and beat after each ingredient: oil, sugar, vanilla, baking soda, cinnamon, salt.
- Add the flour in 1/2 cup increments. It will be stiff.
- Fold in the walnuts.
- Fold in the apple slices.
- Pat the dough into an oblong cake pan that's been oiled and dusted with flour.
- Bake at 350u0b0F for 45 to 60 minutes (or until a knife inserted in the middle comes out clean).
- Frosting: Combine the cream cheese, butter, vanilla and powdered sugar. Whip until creamy. Pour over the cooled cake.
