Seven Layer Salad
- 5 heads lettuce, shredded
- 5 bunches green onions, chopped
- 5 green pepper, chopped
- 2 bunches celery, chopped
- 4 bunches radishes, chopped
- 20 hard-cooked eggs, chopped
- 3 pkg. frozen peas (10 oz.)
- 10 c. mayonnaise or salad dressing
- 1 c. sugar
- 2 1/2 lb. Cheddar or American cheese, grated
- 1 c. bacon, fried crisp and crumbled or bacon bits
- Layer lettuce in bottom of full size 4-inch serving pan.
- Layer onions, celery, pepper and radishes on lettuce.
- Layer thawed peas over vegetables.
- Layer chopped eggs over peas.
- Mix mayonnaise and sugar, spread over entire pan; seal edges.
- Sprinkle cheese and bacon over mayonnaise.
- Refrigerate overnight, covered.
- Garnish with radishes before serving.
- Yields 100 servings.
