Applesauce-Spice Muffins
- 1 3/4 c. all-purpose flour
- 1/4 tsp. salt
- 1/2 tsp. nutmeg
- 3 c. Raisin Bran cereal
- 1 c. unsweetened applesauce
- 1 egg
- Pam cooking oil
- 4 tsp. baking powder
- 1 tsp. cinnamon
- 1/3 c. sugar
- 1 c. thawed frozen apple juice concentrate, undiluted
- 1/3 c. vegetable oil
- Stir together flour, baking powder, salt, cinnamon, nutmeg and sugar.
- Set aside.
- Measure Raisin Bran cereal, applesauce and apple juice concentrate into large mixing bowl.
- Stir to combine. Let stand 4 minutes or until cereal softens.
- Add egg and oil to cereal mixture.
- Beat well.
- Add flour mixture, stirring only until combined.
- Portion batter evenly into twelve 2 1/2-inch muffin pan cups coated with cooking spray.
- Bake at 400u0b0 about 25 minutes or until golden.
- Serve warm.
- Makes 12 muffins.
