Soft Lemon Drops
- COOKIE
- 1 cup sugar
- 1/2 cup butter, softened
- 1/2 cup sour cream
- 2 eggs
- 2 teaspoons lemon peel, grated
- 1/2 teaspoon lemon extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- GLAZE
- 1 cup powdered sugar
- 1 -2 tablespoon lemon juice
- Heat oven to 350u0b0F.
- Combine sugar and butter in large mixer bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Add sour cream, eggs, lemon peel and lemon extract; continue beating until well mixed.
- Reduce speed to slow; add flour, baking powder and salt.
- Beat until well mixed.
- Drop dough by rounded teaspoonfuls 2 inches apart onto greased cookie sheets.
- Bake for 10 to 12 minutes or until lightly browned.
- Cool completely.
- Combine powdered sugar and enough lemon juice for desired glazing consistency in small bowl.
- Glaze cooled cookies.
