Seafood Fettucini
- 3 sticks butter or margarine
- 3 medium onions, chopped
- 3 stalks celery, chopped
- 2 green peppers, chopped
- 1/2 c. plus 1 Tbsp. flour
- 4 Tbsp. parsley
- 2 to 3 lb. seafood
- 2 to 3 c. half and half
- 1 lb. Velveeta, cubed
- 3 cloves minced garlic
- salt and pepper to taste
- 1 lb. fettucini
- Melt and saute butter, onions, celery and peppers.
- Add flour and stir for 15 minutes, until thick.
- Add parsley and seafood and cook for 20 minutes.
- Add in and blend half and half, Velveeta, garlic and salt and pepper well.
- Cook the fettucini.
- Toss mixture with fettucini.
- Pour into 3-quart buttered casserole dish.
- Sprinkle with Parmesan cheese.
- Bake at 350u0b0 for 25 to 30 minutes.
- Serves 12.
