Southern Banana Pudding
- 1 (4 serving size) pkg. vanilla or banana cream Cook 'n Serve pudding or pie filling
- 2 1/2 c. milk
- 2 egg yolks, well beaten
- 30 to 35 vanilla wafer cookies
- 2 large bananas, sliced
- 2 egg whites
- dash of salt
- 1/4 c. sugar
- Heat oven to 350u0b0.
- Stir pudding mix into milk in medium saucepan.
- Add egg yolks.
- Stirring constantly, cook on medium heat until mixture comes to a full boil.
- Remove from heat.
- Arrange layer of cookies on bottom and up sides of 1 1/2-quart baking dish. Add layer of banana slices; top with 1/3 of the pudding.
- Repeat layers, ending with pudding.
- Beat egg whites and salt with electric mixer on high until foamy.
- Add in sugar; beat until stiff peaks form.
- Spoon onto pudding.
- Bake 10 to 15 minutes or until meringue is a light brown.
- Serve warm or chilled.
- Makes 8 servings.
