Southern Banana Pudding

  1. Heat oven to 350u0b0.
  2. Stir pudding mix into milk in medium saucepan.
  3. Add egg yolks.
  4. Stirring constantly, cook on medium heat until mixture comes to a full boil.
  5. Remove from heat.
  6. Arrange layer of cookies on bottom and up sides of 1 1/2-quart baking dish. Add layer of banana slices; top with 1/3 of the pudding.
  7. Repeat layers, ending with pudding.
  8. Beat egg whites and salt with electric mixer on high until foamy.
  9. Add in sugar; beat until stiff peaks form.
  10. Spoon onto pudding.
  11. Bake 10 to 15 minutes or until meringue is a light brown.
  12. Serve warm or chilled.
  13. Makes 8 servings.
