Cashew Chicken
- 1 lb. chicken tenderloin, cut into strips
- 1 c. snow peas, cleaned
- 1 c. broccoli florets
- 1 c. cauliflower florets
- 1 c. bok choy, sliced thin
- 1 c. green pepper, sliced julienne
- 8 cherry tomatoes
- 1 c. scallions, sliced 1-inch
- 1 lb. cashews
- 1 tsp. fresh ginger, chopped fine
- 1 oz. soy sauce
- 1 oz. hoisin
- 1 oz. sherry
- 1 tsp. fresh, crushed garlic
- 8 oz. egg whites
- 4 oz. cornstarch
- Dip chicken in egg whites and cornstarch.
- Saute chicken.
- Add vegetables, sherry, soy sauce, hoisin, garlic and ginger.
- Add snow peas, cherry tomatoes, bok choy and cashews.
- Total cooking time is about 10 minutes.
- Yields 4 servings.
