White Layer Cake
- 1 c. margarine, softened
- 2 c. sugar
- 3 c. sifted cake flour
- 1 Tbsp. baking powder
- 1 c. low-fat milk
- 1/2 tsp. salt
- 1 tsp. vanilla extract
- 1 tsp. lemon extract
- 6 egg whites, stiffly beaten
- Cream margarine and sugar in large mixer bowl until light and fluffy.
- Combine flour and baking powder in bowl; mix well.
- Add to creamed mixture alternately with milk, beating well after each addition.
- Add salt, vanilla and lemon extract; beat well.
- Fold in egg whites gently.
- Pour into 3 greased and floured 9-inch round cake pans.
- Bake at 375u0b0 for 25 to 30 minutes or until layers test done.
- Remove to wire racks to cool completely.
- Top with favorite icing, fruit or strawberries.
- Yield:
- 12 servings.
