Bacon-Taco Cheeseburger Meatloaf
- 1 3/4 lbs ground chuck
- 6 slices bacon, cooked and crumbled
- 4 ounces sharp cheddar cheese, grated
- 4 ounces parmesan cheese, grated
- 4 ounces mozzarella cheese
- 1/2 cup breadcrumbs, toasted
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 (1 3/4 ounce) package taco seasoning mix, hot and spicy
- 1/3 cup ketchup
- 2 tablespoons prepared mustard
- 3 slices bacon
- Preheat oven to 350 degrees F. Toast bread crumbs.
- In a large bowl, combine all ingredients except 3 slices of bacon, mixing well.
- Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Place 3 slices of bacon on top of meatloaf. Bake for 40 minutes. I used the Flavorwave Oven.
