Pork And Pepper Goulash
- 1 lb. lean pork (bite-sized cubes), cut from shoulder and fat discarded
- 2 slices bacon, cut in 1-inch pieces
- 1 large onion, halved and sliced
- 1 green pepper, cut in strips
- 1 red pepper, cut in strips
- 1 tomato, chopped coarsely
- 2 to 3 tsp. paprika
- 2 cloves garlic, minced
- 1 tsp. caraway seed
- 1 tsp. salt
- 2 tsp. cornstarch
- 1/4 c. chicken broth, beef broth or water
- Cut pork into 3/4 to 1-inch cubes.
- Heat bacon in heavy skillet.
- Cook until crisp.
- Add onion.
- Saute for 2 minutes until onion is wilted.
- Add pork cubes to pan along with green and red peppers, tomato, paprika, garlic, caraway seed and salt.
- Cook, stirring over high heat for 5 minutes.
- Turn heat down to low; cover and simmer for 10 minutes.
- Meanwhile, stir cornstarch and broth together until smooth.
- Pour mixture into pan with meat and peppers.
- Heat to boiling; stir and cook until juices are thickened.
