Fried Rice With Shrimp
- 1/2 lb. fresh shrimp, shelled and deveined
- 1 tsp. cornstarch
- 1/2 tsp. salt
- 5 Tbsp. oil
- 3 beaten eggs
- 4 c. cold cooked rice
- 2 Tbsp. soy sauce
- 3 green onions, chopped
- dash of ginger
- 2 Tbsp. rice wine (if desired)
- Cut shrimp into small pieces.
- Mix with cornstarch and salt. Heat 1 tablespoon oil in wok to 400u0b0.
- Stir-fry shrimp and green onions until pink, about 30 seconds.
- Remove.
- Heat 2 tablespoons oil in wok, pour in beaten eggs.
- Scramble fine.
- Remove.
- Heat 2 tablespoons oil in wok and add rice, soy sauce and ginger. Stir-fry until thoroughly heated.
- Add eggs, shrimp and rice wine. Stir-fry 1 minute.
- Recipe is also good without shrimp or good with leftover pork or beef.
