Cheese Cake
- 20 square graham crackers
- 1/4 c. melted margarine and brown sugar
- 1 pkg. lemon jello
- 3/4 c. boiling water
- 8 oz. softened cream cheese
- 1 can cold evaporated milk
- 1 c. white sugar
- 1 tsp. vanilla
- Crush graham crackers.
- Mix with melted margarine and brown sugar.
- Divide this mixture into 2 equal parts.
- Put half of the crumbs into the bottom of a 9 x 9 x 3-inch dish.
- Reserve the rest.
- Dissolve jello in boiling water.
- Add cream cheese.
- In another bowl, whip cold evaporated milk until thick with electric mixer.
- Gradually add white sugar and vanilla.
- Add the jello mixture and beat well.
- Pour the jello mixture onto crumbs.
- Add the remaining crumbs on top of the jello mixture.
- Refrigerate.
