Creamy Mushroom Pasta
- 1 lb whole wheat penne
- 2 tablespoons olive oil
- 2 shallots, chopped
- 2 tablespoons garlic, minced
- 1/2 lb button mushroom, sliced
- 1/2 lb cremini mushroom, sliced
- 1/2 cup Chardonnay wine
- 1/2 cup chicken stock
- 1/4 cup parmesan cheese, shredded
- 8 ounces mascarpone cheese, room temperature
- In large pot, add water and bring to a boil. Add salt to water to flavor pasta. Cook pasta according to instructions on the box.
- In large skillet on medium heat, add olive oil and saute shallots and garlic for 2 minutes. Add sliced mushrooms to skillet and cook until tender. Turn heat to high and add wine. Stir until all wine had evaporated. Add chicken stock and allow it to reduce slightly. Remove from heat and add mascarpone cheese to skillet. Stir until all cheese is melted.
- In large serving bowl, add pasta and sauce. Top pasta with Parmesan cheese and serve.
