Island Sweet Potatoes

  1. Cook potatoes and carrots in boiling water until tender; drain, reserve some cooking liquid.
  2. In a small pan, melt butter.
  3. Cook onion, garlic and ginger until soft but not brown.
  4. Add curry powder, and cook 1 minute more.
  5. Puree potatoes and carrots using a food processor, food mill, or mash with potato masher.
  6. Mix in curry mixture and chutney; if mixture is too thick, thin with reserved cooking liquid.
  7. Season to taste with salt and pepper.
