Chow Chow
- 1 gal. cabbage
- 1 gal. green tomatoes
- 1 doz. onions
- 1/2 doz. sweet bell peppers
- 1/2 doz. bell peppers (red)
- 1 gal. vinegar
- 2 lb. sugar
- 1/2 c. ground mustard
- 6 Tbsp. white mustard seed
- 3 Tbsp. celery seed
- 1 Tbsp. cloves, tied in bag
- Chop vegetables; mix well.
- Put a layer of vegetables in an enameled pan or stone jar and sprinkle with salt.
- Repeat until all vegetables are used.
- Cover the last layer with salt.
- Let stand overnight.
- Drain well.
- In separate vessel, put vinegar, sugar, ground mustard, mustard seed, celery seed and cloves.
- Heat to boiling; add the well drained vegetables and cook slowly until tender (about 30 minutes).
- Pack in jars.
- Process in boiling water bath canner for 10 minutes.
