One-Pot Taco Pasta
- 1 cup onion, diced
- 3 garlic cloves, diced
- 1 lb lean ground beef
- 1/2 teaspoon salt
- 2 tablespoons taco seasoning
- 1 cup corn
- 1 cup beans
- 1 cup salsa
- 2 cups water
- 8 ounces rotini pasta
- 1 cup cheese
- 1/2 cup fresh tomato, diced
- 2 tablespoons fresh cilantro
- Preheat large, deep skillet/saucepan over medium heat.
- Spray cooking spray and add onion, garlic and beef. Season with salt and taco seasoning and cook, stirring occasionally until cooked through.
- Drain excess fat if necessary.
- Stir in corn, beans, salsa, pasta, and 2 cups water.
- Bring to a boil, cover, reduce heat and simmer until pasta is cooked through, 10-15 minutes, stirring occasionally.
- Remove from heat and stir in cheese, tomatoes & cilantro.
- Enjoy!
