Apricot Brazil Nut Melts

  1. Cream the butter and sugar.
  2. Add egg and vanilla; cream until fluffy.
  3. Blend in flour and salt.
  4. Add nuts and mix well.
  5. Shape into walnut size balls.
  6. Place on ungreased baking sheet about 2 inches apart.
  7. Flatten with bottom of glass that has been dipped into flour.
  8. Make indentation in center of cookie.
  9. Bake in hot oven (375u0b0) for about 4 minutes.
  10. Remove from oven; press center again.
  11. Fill with a little apricot jam and return to oven for another 4 to 6 minutes, until edges are light golden.
  12. Cool on rack.
  13. Decorate each cookie with 3 slices of Brazil nuts, arranged spoke fashion.
  14. In center, place pieces of red and green cherries. Makes 4 to 5 dozen cookies.
