Apricot Brazil Nut Melts
- 3/4 c. butter
- 1/2 c. sugar
- 1 egg
- 1 1/2 tsp. vanilla
- 2 c. flour
- 1/8 tsp. salt
- 3/4 c. very finely chopped Brazil nuts
- apricot jam
- Brazil nut slices
- red and green candied cherries
- Cream the butter and sugar.
- Add egg and vanilla; cream until fluffy.
- Blend in flour and salt.
- Add nuts and mix well.
- Shape into walnut size balls.
- Place on ungreased baking sheet about 2 inches apart.
- Flatten with bottom of glass that has been dipped into flour.
- Make indentation in center of cookie.
- Bake in hot oven (375u0b0) for about 4 minutes.
- Remove from oven; press center again.
- Fill with a little apricot jam and return to oven for another 4 to 6 minutes, until edges are light golden.
- Cool on rack.
- Decorate each cookie with 3 slices of Brazil nuts, arranged spoke fashion.
- In center, place pieces of red and green cherries. Makes 4 to 5 dozen cookies.
