Pineapple Glazed Apple Pie
- 3/4 c. unsweetened pineapple juice
- 3/4 c. apple juice
- 3/4 c. sugar
- 7 tart, medium apples, peeled, cored and cut in wedges (7 c.)
- 1/2 tsp. lemon flavoring
- 1/2 tsp. vanilla flavoring
- 1 tsp. allspice or apple pie spice
- 3 Tbsp. cornstarch or flour
- 1 Tbsp. margarine
- 1/4 tsp. salt
- pie crust
- cinnamon-sugar
- In large saucepan, combine pineapple juice, 1/2 cup apple juice and the sugar.
- Bring to boiling.
- Blend the remaining 1/4 cup apple juice into cornstarch or flour.
- Add to hot pineapple-apple liquid in saucepan.
- Cook and stir until mixture thickens and bubbles.
- Add in apples and cook until near tender. Remove from heat; stir in margarine, vanilla and lemon flavorings, salt and allspice or apple pie spice.
