Vintage Rumford Gingerbread
- 1/4 cup shortening
- 1/2 cup brown sugar, packed
- 1 large egg
- 2/3 cup molasses
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup boiling water
- cream together the fat and sugar, add the egg and molasses and beat well --
- Mix and sift in the remaining dry ingredients.adding the boiling water last.
- Pour into shallow well greased pans or muffin cups -- (not sure, but with the tendency of molasses to scorch.I think I will try it in a 13x9 pan first --
- bake at 325* for 20-25 minutes -- Raisins may be added if desired -- before adding boiling water -- .
