Savory Chili

  1. Heat olive oil in 5-quart Dutch oven.
  2. Add garlic, onion, celery and parsley; saute until tender.
  3. Add ground beef and brown, stirring occasionally.
  4. Drain off drippings; reserve 3 tablespoons.
  5. Add reserved drippings to meat mixture.
  6. Stir in tomato paste, tomato sauce, water, chili powder, cayenne pepper, salt and pepper.
  7. Bring to a boil; reduce heat and simmer for 1 hour.
  8. If desired, add red beans during last 15 minutes.
  9. Let stand overnight and serve with cheese, onion or lettuce condiments.
  10. Makes 8 to 10 servings.
