Turnip And Pear Soup
- 1 medium onion, chopped
- 1 tablespoon vegetable oil or 1 tablespoon butter
- 3 medium-large turnips, peeled and chopped (about 3 cups)
- 3 large pears, peeled, cored and chopped (about 3 cups)
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1 1/4 cups pear juice or 1 1/4 cups apple juice
- fresh ground black pepper, to taste
- Options
- shredded radish
- raspberries
- Saute onion in butter or oil, until translucent.
- Add chopped turnips, apples and thyme.
- Saute for 10 minutes, stirring frequently.
- Add fruit juice and cook on low heat until turnips are tender.
- In a blender, food processor, or using a stick blender, puree until thick and smooth. Add black pepper to taste.
- Serve with optional garnishes, if desired.
