Seafood File Gumbo

  1. In a medium sized pot, make a roux with flour and oil.
  2. Saute onions and celery on high for 3 minutes.
  3. Stir in water and seasoning and chicken.
  4. Cover and cook for 15 minutes.
  5. Add shrimp and crabs; reduce heat.
  6. Cook 25 minutes; add oysters, juice and sausage.
  7. Cook 10 minutes.
  8. Sprinkle with file.
