Chewy Chocolate Chip Oatmeal-Raisin Cookies
- 1/2 c. light corn syrup
- 3/4 c. packed dark brown sugar
- 1/2 c. sugar
- 2 large egg whites
- 1 large egg
- 2 tsp. vanilla extract
- 2 c. all-purpose flour
- 1 c. quick cooking oats (uncooked)
- 1 c. semi-sweet chocolate pieces
- 1/2 c. dark seedless raisins
- 1 tsp. baking soda
- 1/2 tsp. salt
- Preheat oven to 375u0b0.
- Spray 2 large cookie sheets with nonstick cooking spray.
- In large bowl, beat on low speed corn oil, brown sugar and sugar until combined.
- Increase speed to high. Beat until light and fluffy.
- Add egg whites, egg and vanilla. Beat until smooth.
- With spoon, stir in flour, oats, chocolate pieces, raisins, baking soda and salt.
- Mix well.
- Drop dough by level tablespoons on cookie sheet.
- Bake cookies 10 to 12 minutes until golden.
- Remove cookies with pancake turner.
- Place on wire rack to cool.
- Repeat until all batter is used.
- Makes about 4 dozen cookies.
