Chewy Chocolate Chip Oatmeal-Raisin Cookies

  1. Preheat oven to 375u0b0.
  2. Spray 2 large cookie sheets with nonstick cooking spray.
  3. In large bowl, beat on low speed corn oil, brown sugar and sugar until combined.
  4. Increase speed to high. Beat until light and fluffy.
  5. Add egg whites, egg and vanilla. Beat until smooth.
  6. With spoon, stir in flour, oats, chocolate pieces, raisins, baking soda and salt.
  7. Mix well.
  8. Drop dough by level tablespoons on cookie sheet.
  9. Bake cookies 10 to 12 minutes until golden.
  10. Remove cookies with pancake turner.
  11. Place on wire rack to cool.
  12. Repeat until all batter is used.
  13. Makes about 4 dozen cookies.
