Potato Saute And Sausage Or Turkey

  1. Cut each unpeeled potato into quarters and cut stem end from beans.
  2. In 6-quart pan, heat potatoes covered in hot water to boiling over high heat.
  3. Reduce heat to low, cover and simmer 7 minutes.
  4. Stir in green beans, adding more hot water if needed. Bring to a boil over high heat, reduce heat to low and simmer 5 minutes.
  5. Drain.
  6. Thinly slice onions.
  7. In 12-inch skillet over medium heat, put 1 1/2 tablespoons hot salad oil and cook sausage until lightly brown.
  8. Add onions and continue cooking until onions are tender.
  9. Stir in 1/2 cup water, turn heat to low; cover and cook until sausage is cooked through.
  10. Remove sausage mixture to bowl.
  11. In same skillet, in 1 1/2 tablespoons hot salad oil, cook potatoes and green beans with salt and pepper until potatoes are golden, stirring frequently. Cut tomatoes in wedges.
  12. Return sausage mixture to skillet, then add tomatoes and heat through. Spoon on to warm platters.
  13. Makes 8 main dish servings.
