Chicken A La King(Low-Fat)
- 1 Tbsp. margarine
- 1/4 c. chopped onion
- 2 c. skim milk
- 1/2 tsp. salt
- 1/4 tsp. paprika
- 3 (4 oz.) skinned and boned chicken breast halves, cut in bite size pieces
- 1 (2 oz.) jar diced pimento, drained
- 4 slices wheat bread, trimmed and toasted
- 1/2 c. sliced mushrooms
- 1/4 c. all-purpose flour
- 1/4 c. frozen English peas, thawed
- 1/2 tsp. pepper
- Melt margarine in a large, nonstick skillet over medium heat. Add chicken and onion; cook, stirring constantly, 3 to 5 minutes, or until chicken is browned.
- Add mushrooms; cook 1 minute.
- Stir in flour and cook for 1 minute, stirring constantly.
- Gradually add milk and next 4 ingredients.
- Cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
- Cut each slice of toasted bread into 4 triangles.
- Serve chicken mixture with 4 toast triangles; sprinkle with paprika.
