Bread And Butter Pickles(Dietetic)
- 4 c. cucumbers (1/8-inch slices)
- 1 c. onions (1/8-inch slices)
- 1 garlic clove
- 2 Tbsp. salt
- 14 to 18 ice cubes
- 1 c. cider vinegar
- 1 c. water
- 1 1/4 tsp. mustard seed
- 3/4 tsp. celery seed
- 1/2 tsp. turmeric
- 3 1/2 to 4 tsp. liquid artificial sweetener
- Combine cucumbers, onions and garlic in large bowl.
- Sprinkle with salt.
- Cover with ice cubes.
- Let stand overnight.
- Drain well.
- Combine remaining ingredients, except liquid artificial sweetener.
- Add cucumber mixture.
- Bring to a boil.
- Cover and boil gently for 2 minutes.
- Stir in sweetener.
- Remove garlic clove.
- Spoon into sterile jars.
- Seal.
- Yield: 5 cups. Exchanges: 1/2 cup = 1 vegetable and contains 28 calories.
