Sunkist Lemon Bars
- 1 egg
- 1/3 c. softened butter or margarine
- 1 pkg. lemon cake mix (I use Betty Crocker)
- 2 eggs
- 1 c. granulated sugar
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 tsp. grated lemon peel
- 1/4 c. lemon juice
- confectioners sugar (if desired)
- Heat oven to 350u0b0.
- Mix 1 egg, butter and dry cake mix until crumbly; reserve 1 cup.
- Pat remaining mixture lightly into ungreased 9 x 13-inch pan.
- Bake until lightly browned, about 15 minutes.
- Beat 2 eggs, sugar, baking powder, salt, lemon peel and lemon juice with rotary beater until light and foamy.
- Pour over hot crust.
- Sprinkle with reserved crumb mixture.
- Bake about 15 minutes or until lightly browned.
- Sprinkle with confectioners sugar, if desired.
- Cool, cut into about 2 x 1 1/2-inch bars. Makes 32 bars.
