Sunkist Lemon Bars

  1. Heat oven to 350u0b0.
  2. Mix 1 egg, butter and dry cake mix until crumbly; reserve 1 cup.
  3. Pat remaining mixture lightly into ungreased 9 x 13-inch pan.
  4. Bake until lightly browned, about 15 minutes.
  5. Beat 2 eggs, sugar, baking powder, salt, lemon peel and lemon juice with rotary beater until light and foamy.
  6. Pour over hot crust.
  7. Sprinkle with reserved crumb mixture.
  8. Bake about 15 minutes or until lightly browned.
  9. Sprinkle with confectioners sugar, if desired.
  10. Cool, cut into about 2 x 1 1/2-inch bars. Makes 32 bars.
