Cheese Spread
- 1 (4 oz.) jar chopped pimientos
- 1 (8 oz.) carton pimiento cheese
- 1 c. chopped pecans
- 1/8 tsp. pepper
- 2 Tbsp. chili powder
- 2 Tbsp. cayenne pepper
- 1 (8 oz.) pkg. cream cheese (room temperature)
- 2 c. (8 oz. pkg.) shredded sharp Cheddar cheese
- 1/2 tsp. salt
- 1/4 to 1/2 tsp. garlic powder
- 2 Tbsp. paprika
- Drain the pimientos and chop finely (or mash them with the back of a fork).
- Combine the 3 cheeses in a large mixing bowl and mix well.
- Add the pimientos, pecans, salt, pepper and garlic powder.
- Mix well and shape into 2 balls.
- Sprinkle the chili powder, paprika and cayenne pepper on waxed paper or plastic wrap. Roll each ball in the spices until completely covered and refrigerate or freeze.
