Apple Snack Cake
- 4 medium apples, diced
- 2 c. white sugar
- 2 eggs, well beaten
- 1 c. corn oil
- 2 1/2 c. flour
- 1 tsp. allspice
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 2 tsp. soda
- 1 c. raisins
- 1 c. pecans
- Cover diced apples with sugar.
- Let stand until liquid rises, stirring occasionally, until sugar dissolves.
- Blend together eggs and corn oil.
- Add to apple-sugar mixture.
- Sift together flour, allspice, cinnamon, nutmeg, salt and soda.
- Add raisins and pecans.
- Add flour mixture to apple mixture.
- Beat by hand as too much mixing makes it crumble.
- Pour into greased 9 x 13 x 2-inch pan.
- Bake at 350u0b0 for 50 to 55 minutes.
- After it comes out of the oven, poke holes in cake and pour the following sauce over top.
