Fancy Chicken Puff Pie
- 4 Tbsp. butter or margarine
- 1/4 c. shallots
- 1/4 c. all-purpose flour
- 1 c. chicken stock or broth
- 1/4 c. sherry
- 1/8 tsp. white ground pepper
- pinch of ground nutmeg
- salt to taste
- 1/4 lb. ham, chopped small
- 3 c. cooked chicken, chopped
- 1 1/2 c. fresh asparagus pieces or 10 oz. frozen
- 1 c. (1/2 pt.) heavy cream
- 1 egg, well beaten
- 1 chilled pie crust or 1 sheet frozen puff pastry
- In medium saucepan over medium-high heat, melt butter and saute shallots lightly.
- Stir in flour until creamy.
- Add broth and sherry slowly; heat until boiling and gravy is smooth.
- Season to taste with nutmeg, salt and pepper.
- Reduce heat to low and simmer 5 minutes.
- Stir in ham, chicken, asparagus and cream. Pour chicken mixture into ungreased 9-inch pie plate.
